Chinese Chicken Salad

Serves -- a small army
I got this recipe from my Aunt Jane, I'm not sure what the original source of the recipe is

Salad

4C cooked chicken breast (about 3 breasts), finely chopped
1 Head white cabbage, finely shredded
3 Bunches green onions/spring onions, sliced
1 Red pepper, chopped
2T sesame seeds, dry toasted in sautee pan
1/2C Slivered almonds, dry toasted in sautee pan
2 Packages chicken flavoured ramen, uncooked

Dressing

3T Salad oil
1T Sesame oil
2T sugar
6T Rice vineegar
2 Ramen seasoning sachets
1t Salt
*Let dressing stand 4 hours/overnight


Prepare all ingredients and toss with dressing

Notes
I don't usually use chicken in this recipe as my husband is a vegetarian. It's fine without it. I also think you could substitute salmon or shrimp for the chicken.
