Banana Bread

I originally took this recipe from a little book given to me by my Aunt called, Feed Me I'm Yours. But I've adapted the recipe so often that I feel it's really mine now.
Makes 1 loaf or 12 muffins

1/4C   Butter
1/2C   Brown sugar
1   Egg, beaten
1C   Bran cereal or rolled oats
4-5   Ripe bananas, mashed (about 1/2C)
1t   Vanilla
1 1/2C   Flour (white, wholemeal or combo)
2t   Baking powder
1/2t   Baking soda
1/2C   Nuts, chopped (optional)


Pre-heat oven to 180C/350F

Cream butter and sugar until light. Add egg and mix well.

Stir in cereal, bananas and vanilla.

Combine remaining ingredients in a bowl and add to the first mixture, stirring just long enough to moisten the flour.

Grease and flour loaf pan (or line with baking parchment) or prepare muffin cases. Bake loaf for 1 hour. Bake muffins for 20-25 mins.

Notes
I always use wholemeal flour for this. I think it actually tastes better than the white flour. 
I often use honey instead of the sugar, setting the oven to 160C instead of 180C and checking the bread at 45 mins instead of an hour. 
I used to make this bread for my son when he was little and wouldn't eat any vegetables. So I often added (and still do when I have it to hand) 1/2C of pureed courgette, carrot, sweet potato or butternut squash. 
On occasion I also add 1-2T of ground almonds (do this when adding the puree as they balance each other)
